Most of the cake recipes rely on eggs. Eggs give the cake a fluffy texture. In a cake recipe, eggs can be replaced by bananas, yogurt, apple sauce, baking powder or silken tofu. Ingredients

  • 150 gm. butter
  • ¾ cup milk
  • 3 tbsp. vinegar
  • 150gm castor sugar
  • 150 gm. flour
  • vanilla essence 1 tbsp.
  • 1 tbsp. cocoa
  • 1 ½ tbsp. baking powder

For Icing

  • 50 gm. butter
  • 100gm. icing sugar
  • 50gm. melted chocolate
  • 2tbsp. cocoa

Baking method

Start by beating butter and sugar together. Keep beating until they turn light and fluffy. Now, gradually add milk and vinegar in it and beat for some more time. Add flour in the mixture. Keep aside 1tbsp of flour. Dive the batter into half. Flavor one half with cocoa powder and add 1tbsp flour kept aside in another half. Now pour the two batters in a tin 1 spoon at a time. Make the 8 patterns in the tin a few times. This will give the cake a marble pattern. Bake it for 180C for 25 minutes. For icing mix all the ingredients together. Spread it over the cake and let cool, decorate and serve.

Eggless Pineapple Cake

Pineapple cake made with sponge cake. It is layered with cream and chopped pineapple. It is filled with whipped cream. This cake is rich and smooth.

Ingredients

  • 2 cups flour
  • 2 ½ tbsp. of baking powder
  • ½ cup butter
  • 1 ½ cup powdered sugar
  • ½ cup of water
  • ¾ cup sour yogurt
  • 1 tbsp. vanilla essence
  • ¼ tbsp. salt

For Layering

  • 1 cup chopped pineapple
  • 3 tbsp. pineapple juice
  • 3 cup chilled cream
  • ¼ cup of sugar

Baking method

Add flour, baking powder, salt, sugar, butter, water, and vanilla together. Beat together the mixture. Add yogurt to this cake mixture and beat it till a smooth batter is prepared. Transfer the batter into a greased baking tin. Bake it for 25 min at 160C. Let cool. Cut into 3 sheets.

How to prepare the layering

Whip the cream and sugar, beat it till it holds shape. Place a baked cake sheet on a plate. Spread the cream and some chopped pineapple evenly all over. Repeat the method. Cover the prepared layer all over with cream. Spread some chopped pineapple. Pour some pineapple juice dress with cherries and mint. Slice and serve.
